After cooking for 20 years , 3 of those years as head of Casa Paquita restaurant, our chef has built a cuisine based on the best products and dishes that represent his style, his thoughts and his feelings.

The essence of a childhood learning form Marisa and María, Carlos’ mother and grandmother, instilled him with a love for cuisine.
